Paul Pedroni is owner and head chef of Rose Catering. Paul comes from a long family tradition of food preparation and service-in fact, the last three generations of Pedroni’s have been food suppliers and restauranteurs!
The Pedroni family enterprise began with Paul’s grandfather, Baptista, who emigrated to California from Switzerland in 1890. After a successful stint as an executive chef at the Palace Hotel in San Francisco, Baptista relocated to Petaluma and operated several different businesses including the Family Liquor Store, Petaluma Market and the Swiss-American Restaurant before finally settling into Pedroni’s Delicatessen in 1921, a thriving business for over 70 years.
Paul began learning his craft at the family delicatessen at the age of 8! During summer vacations and after school, Paul worked for 25¢ an hour preparing vegetables, marinades and meats for roasting and barbecuing. When his father retired from the family business, Paul took over management of all food purchases and planning for Pedroni’s Delicatessen. He also expanded the menu to include newly created salads, unique pastas and other specialty items. In addition, Paul supplied his distinctive signature dishes to many Bay Area caterers.
One customer was popular local caterer, Eva Rose. After over 50 successful years of catering in the Bay Area, Eva decided to retire in 1983. Paul had decided to start a catering business of his own, so he continued the tradition Eva had begun and reestablished the business as Rose Catering.
Paul is an active member of CaterSource, an organization of professional caterers nationwide who meet and share expertise, and is proud to have been included in The Food Professional’s Guide, Directory of People, Products and Services published by The James Beard Foundation.
